This hands-on baking class takes place on a family farm in the Greek countryside, using the same 100-year-old recipes passed down through generations. You’ll work with the authentic, golden, thick-crust phyllo dough typical of rural Greece — rustic, crunchy and easy for anyone to knead and stretch.

You will walk through the farm’s organic garden and harvest seasonal greens and herbs. Back in the open-air kitchen, you will learn to roll, fill and bake your own pies, using the family recipes and the farm’s Selection extra virgin olive oil. Recipes taught typically include wild greens and feta; a goat-cheese mix with sun-dried tomatoes, olives and oregano; pumpkin with walnuts, cinnamon and raisins; and baklava made with honey, cinnamon and walnuts. While the pies cook in the wood-burning oven, everyone gathers at the big Farmer’s Table to share the meal and enjoy the surroundings. You will leave the farm with a full stomach, a new practical skill and a clear sense of the Slow Food approach to simple, home-cooked flavours.
