In Bologna you will join a small-group food tour led by a local host who will help you eat like a resident. The tour includes six stops at selected historic shops and restaurants where you will taste more than 20 regional specialties. Along the way you will sample classic dishes such as tortellini served in broth and handmade tagliatelle al ragù, enjoy a selection of regional cured meats paired with local wine, and try aged Parmigiano Reggiano together with Aceto Balsamico Tradizionale di Modena. You will also visit the food market, the main square, the Two Towers and other main spots in the city.

Your host will explain local food culture and traditions while you taste, including everyday rules like why tortellini belongs in broth and not in cream, that tagliatelle—not spaghetti—is the traditional pasta for ragù, and that Parmigiano Reggiano is not the same as generic parmesan. Expect a few light local asides too (for example, cappuccino is not typically drunk after lunch, and mortadella is not “baloney”). The cuisine here is mainly pork based; let the provider know if you are vegetarian and cured meats will be replaced with cheese.
