Set among the peaceful countryside of Apulia, in and around the region’s characteristic trulli, this experience invites you to live local traditions and discover the origins of Puglian cuisine. Time is taken slowly here, as in the old family way: you may spend part of the visit collecting wild herbs, seasonal fruits, tomatoes and melons from the organic garden, feeling the soil and wind that shaped these recipes.
At a traditional home you will use a pastry board, flour and the breeze to make orecchiette by hand. You will learn the basic technique, try variations and have several of the small secrets of the craft explained. Alongside the pasta-making you will participate in preparing a meat sauce, seasonal vegetables and local cheeses, helping assemble the lunch. At the end you will taste the dishes you helped create, enjoying the simple flavours tied to the land and the slow rhythms of Apulian cooking.
