At the S.A. Barza Alba (The White Stork) facility in Balti — one of the Republic of Moldova’s largest producers of Divin — you will learn about the traditional craft behind this wine spirit. Divin is produced by double distillation from local raw materials and its distillates are aged for at least three years in oak barrels. Its name comes from the Romanian phrase din vin (from wine) and also echoes the word divine; it is said that a large part of the distillates evaporate and “go to the sky” as a kind of sacrifice that helps achieve the final quality.
Along the way, the company sommelier will explain the history and distinctive qualities of Brandy, Divin and Rachiu from apple cider. You will be taught how to distinguish different types by their aromas, colours and tastes, and you’ll gain a clearer sense of how production methods and ageing influence what you perceive in the glass. The presentation is conversational and centred on the traditions and techniques of the producer in Balti, giving you context for the spirits you encounter.
