On the island of São Jorge you will taste the renowned Queijo de São Jorge and see how it’s made, from the pastures to the cheese factories (queijarias). Along the way you’ll visit the green, medium- and high-altitude pastures where the cows graze in an almost natural habitat. These upland pastures are credited with the milk quality that gives the cheese its distinctive flavour — a quality noted about 500 years ago by Gaspar Frutuoso, who called it “The best cheese of the Azores.”
You will visit the Union of Milk Cooperatives of São Jorge – Uniqueijo – where the traditional and much-appreciated São Jorge cheese is produced, stored, packaged and sold using modern technologies and manufacturing methods. You will also have the opportunity to taste the cheese at different stages of maturation — typically 3, 6 and 24 months — so you can compare how texture and flavour change as it ages.
