I love the Dormy Inn chain: they have a lot of amenities and such a great breakfast buffet for a good price. The hotel in Kanazawa had a amazing breakfast with fresh seafood donburi, tempura, lots of japanese options. The onsen was great, as was the manga library. Rooms are great, a twist of traditional and modern. The entire hotel breathes zen and quiet (except the madness at the breakfast buffet during crowded hours).
