My name is Pietro and I belong to the fourth generation of a family of Sardinian shepherds. I became passionate about country life as a child, first following in my grandfather's footsteps and then my father's. Growing up, moved by the strong values that were transmitted to me, I realized that it was the right time to tell and value our reality. Starting from this idea, in 2019, I graduated in Food Technology with the intention of transforming my family business from a company that produces only sheep's milk to a company that transforms it into cheese. I then became a master cheesemaker by making my passion my job. To give value to our archaic culture, the agricultural world and the Sardinian agro-pastoral territory, I think it is essential to take a step back, to return to the origins, genuineness and simplicity of the past, so as to be able to unify to tradition the new experiments and technology that we have available today. On the basis of these ideas arises Antica Caresi B&B. The structure was founded in the early 2000s within the same company, and if initially it was used entirely as a country house, to date it is intended for another project. In the protection and in full respect of the territory, the structure, surrounded by nature and immersed in the Mediterranean scrub, aims to bring people closer to country life, making known the lifestyle of those who work there, being in close contact with the animals and at the same time being able to enjoy moments of true relaxation. In this regard, I am in charge of managing an educational farm, proposing different experiences dedicated to the method of producing my cheeses.
